Aubergine & Feta Rollups
with Tomato Harissa
1 Aubergine
Feta Cheese
Fresh Basil
Harissa (see recipe for Tomato Harissa)
Method:
Slice aubergine longways into strips and panfry in olive oil. Cut feta cheese into approx 1 cm wide strips. Lay each aubergine slice on a board and place a piece of feta at the base of each aubergine slice. Roll each slice up with the feta cheese inside.
To Serve:
Place approx 1 tablespoon of warm harissa on each plate and then two or three rollups on each. Garnish each plate with fresh basil.
